Chicken with mango (4 servings)

  • 1 tbsp olive oil
  • 1 onion
  • 1 can coconut milk
  • 100 g dried mango
  • 400 ml poultry stock
  • 2 cloves of garlic
  • 15 g ginger
  • 3 tsp tomato paste
  • 2 tsp curry
  • juice of ½ lime
  • 2 double chicken fillets
  • 4 spring onions
  • a few coriander leaves

Directions:

Fry onions in a pan over a drizzle of oil, add coconut milk, stock and sliced mango. Cook over a low heat for 5 minutes until the ingredients soften. Add crushed garlic, grated ginger, tomato paste and curry, then cook until boiling. After the boiling point, reduce the heat and cook for another 8 minutes until the sauce is thick and creamy. Add chopped chicken fillets and cook for 3-4 minutes. At the end, add lime juice and sprinkle with chopped spring onions and fresh coriander. Serve with jasmine rice.
